My Favorite Mac + Cheese
Tags:Last night I made my favorite mac & cheese recipe and wanted to pass it along.
I got this one from a friend almost ten years ago and I have made it many, many times over the years. I added my own notes to the recipe in brown.
Serious comfort food. Enjoy!
Macaroni & Cheese

2 ½ cups Macaroni [I've use both big & small macaroni and they both work fine]
4T butter
4T flour
2 cups milk[we use non-fat]
1 tsp salt
1 tsp sugar
½ pound processed cheese (velveeta) cubed
2/3 cup sour cream [light or fat free is fine]
1 1/3 cup cottage cheese [light or fat free is fine]
2 cups sharp cheddar grated
1 ½ cup soft breadcrumbs
2 tsp butter
paprika sprinkles
1. Preheat oven to 350 degrees.
2. Cook and drain macaroni and place in a 2 ½ quart casserole dish.
3. Melt butter over medium heat in a large saucepan; stir in flour and mix well.Add milk and cook over medium heat, stirring constantly until sauce thickens. This part takes some time - be ready to stand at the stove for a bit - it's worth the effort! Add salt, sugar, and processed cheese; mix well.
4. Mix sour cream and cottage cheese into sauce and pour over macaroni; mix well.
5. Sprinkle grated cheddar and crumbs over top. Dot with butter and sprinkle with paprika. May be frozen at this point.
6. Bake in preheated oven at 350 for 45-50 minutes. Serves 6. Makes great left-overs.

Ali - Have you tried this recipe using Gluten Free noodles & rice flour??? I (used to love) mac & cheese, but since being diagnosed as Celiac, I've been missing out. I thought you once said you went GF for Simon's diet (?)

So, I made your Mac & Cheese recipe tonight for a Mom's Night In with some girlfriends and their kids and it was a hit! Everyone had seconds and asked for the recipe. Thanks for a new yummy favorite.

I made this lsat night for dinner, I am in the UK so we don't have Velveeta so I used normal cheddar. It was delicious. I've never made a real mac and cheese before (I am partial to the Kraft stuff), but we all really enjoyed this.

Hi Ali,
First it was Father Ryan's Pasta Sauce, now it's Ms. Allbright's Mac and Cheese. You post it and my wife insists I make it. It is delicious...and given the large amount it will continue to be delicious for the foreseeable future! For my copy I have indicated 2 1/2 c UNCOOKED macaroni; 8 oz carton sour cream; 16 oz carton cottage cheese. I'm not crazy about Velveeta, so the next time I may substitute a different cheese (Gruyere if I can afford it!).
My wife loves all your work. She is a HUGE scrapbooker...whoops! "Life Artist". I may have to move to the garage to make room for all her scrapbooks.
We're happy about your husband's new position. We have a daughter in Independence and a grand nephew in Grants Pass.

I made this for my girls scrap weekend away. (Got it from an old post, of yours.) We loved it! My daughter just asked me tonight when do we get to have the best mac cheese. It is wonderful :) Thanks for sharing!
