Still crazy busy here. Got my hair done - one of my favorite things to do. I have been going to the same hair lady for eight years now. Can't believe that much time has gone by. She has seen me through lots of stuff - including cutting my hair super super short a few years back. And now it is longer and I like it how it is...and I like having it colored and texturized. Just all around goodness.
It was reported by Simon's teacher that he had his first conversation with another little boy today. She said she could not tell exactly what they were saying but that they were actually chatting with one another. This is awesome. She said he also said to her plain as day, "I need a high five." LOL - you go dude.
I am feeling so burned out on cooking around here - all cooking creativity seems to have vanished. I need some inspiration - anyone good any good stuff without dairy? I need to make it fun again - having time to do it helps too LOL.
And, last night during American Idol (which overall did not rate up there with other episodes) Simon went upstairs and came back down with his guitar. My Dad got it for him last year and he loves to strum - it was cool to see how he decided he wanted to have it with him while we watched the "singing show."

Hey Ali... Welcome back from CKU :) A favorite dish of ours is a super simple veggie pasta (can use gluten-free if you like)... cut up fresh tomatoes and cook in a splash of olive oil until they begin to release their juices. Season to taste with garlic, s&p, fresh thyme & rosemary if you have it. Add chopped onions, mushrooms and continue to saute. A splash of white wine is good too. When onions and mushrooms are about half done, add garbanzo beans and heat through. Add spinach at the last minute; stir into sauce until spinach is wilted. Serve over your favorite pasta. Chicken's a tasty addition if you want some meat. Total prep (without chicken) is less than 20 minutes. Really yummy and healthy too :)

If you like fish, here is a recipe for mahi mahi we tried last night and really liked. Even my 2 & 4 year olds eat it which is a miracle with fish.

I wish my 5 year old daughter would adjust to school. She only goes 2 half days and she still hates it. I don't know what were gonna do when she starts kindergarten in august and has to go every day.

The hair looks killer babe. About time for me to get highlights in mine, since I decided to give myself a good 'ol snipparo the other day (great thing about my hair is that i could chop it with an axe and no one could tell, so why pay to get it cut ?)
Anyway..we are doing lots of steaks, soups, baked potatos loaded with goodies on top, gluten free pasta with yummy sauces. Lots of breakfast for dinner too :)
SO glad to see simon using expressive language..that ROCKS!

I was just thinking the same thing tonight as Dallon told me in tears that he didn't like the dinners I made... only quesadillas and hamburgers (which we had tonight). So I was thinking I needed to update the "boy liking" meals. He likes stuff but apparently today was a rough day:P Cute hair... I am getting mine done this weekend:)

Hey! Go Simon! Stupendous! Haven't had the cooking bug since I had that stupid scooter months ago--wasn't kitchen-friendly and I lost my cooking mojo.
When I get bored, I stick with salads (greens, sliced strawberries, roasted nuts, vinaigrette, crumbled blue cheese for those that can do dairy) and when I'm feeling crazy, a salad bar. My nephews love the chow mein noodles or goldfish crackers, kidney beans, shredded carrots, greens, olives, peas, celery, etc etc.

Here's something fast and easy:
(My Fav to pull out in a hurry and when I get bored.)
1/2 C Honey (we use the local kind so its really sweet)
1/4 C regular ole' yellow mustard
1/4 C melted butter
2 tsp curry powder
Stir mixture and pour over cut up chicken breast in a baking dish. Bake at 350 for one hour. Serve over steamed rice. YUM.

Recently my 5 yo has been requesting Rachel Ray meals (he loves watching her cooking show on Food TV)... had her pecan crusted chicken tenders the other night-yum and chicken curry in a hurry a week before that. Easy and all done in 30 minutes (or so- I'm not quite as fast as her). Love that its good food done faster than I can get take out. Her recipes are on foodtv.com
